History
Cabbage is the oldest of the brassica family. It was first cultivated in over 4000 years ago by egyptians and pre-celtic socities. While the medditeranian varities had developed in to modern day broccoli the cabbage in nothern europe had devloped into brussel sprouts and kale.
The tight cabbage head that is familiar in modern culinary did not come around until the 13th century. Since then it has become popular in soups, coleslaw and even burrito fillings or wraps.

Water

1 to 2 inches of water per week.
Water the plants when the topsoil is dry to the touch.

Plant care
Sowing Seeds
Plant seeds 1/4" to a 1/2" deep and space them 4 to 6 inches apart. Cover with straw to help retain moisture.
Germination
Seeds can take 3 to 10 days to germinate
Once the seeds have sprouted remove the straw and then the plants out to 24 to 36 inches of space between plants.
Pruning
Remove an yellowing or disease leaves. If any leaves are touching the ground removing them can prevent infection
Harvest
Identify the main head and cut right below the the stalk of the plant.
Growing Tips
Some varieties can produce a second smaller head of cabbage. This can be harvested in the same way as the main head.
Leaving the straw after germination can help retain moisture but also runs a risk for disease.
