Dating back to the romans celery was never used as a food. it was first used a medicine and cerimonal wears for atheletes. It wasnt until the 1600s that the it had begun it culinary journy as a herb and the 1800s that it when it was bred for it tender stalks. In modern society it is still seen as a higher class crop being used in mixed drinks and center pieces

Plant care
Sowing Seeds
Celery requires sunlight to sprout and is best started in a tray. lightly pack the soil and place several seeds on top. Covering the tray with a clear plastic can improve germination
Germination
Seeds can take 2 to 3 weeks to germinate
Celery has shallow roots and need to be carefully handled to avoid damage. Do not bury the celery, plant it at the same level it was while in the tray
Pruning
Pruning is not required. Remove any stalks that are infeceted to prevent disease from spreading to healthy plant
Harvest
Celery is a come again crop. harvest what you need and come back for more as needed.
Keep the crown in the ceneter intact for continued growth
Growing Tips
If harvesting the whole stalk tie the stalks together before cutting to keep them bunddled together.
Cover the stalks with cardboard to make them pale more tender
